For this post, I really really wanted a good recipe. I wanted something that I could technically make for my husband on Valentine’s day, or any other special day.

Then I tried this chocolate bread with marshmallow glaze, and oh my.

It was decadent and rich, like a brownie or a cake. But it still had the delightful texture of bread. The glaze gave it an extra sweetness that just put it over the top.

I know I’m trying to watch my weight, but I couldn’t help myself with this bread. I couldn’t stop at just one slice. I had to have another. And then another.

And perhaps one more slice. Just because.

And I washed it all down with a cold glass of milk.

Time

Prep time: 10-15 minutes
Rise time: None
Cook time: 55 to 60 minutes
Total time: Approximately 1 Hour 5 minutes to 1 Hour 15 minutes

Ingredients

Here’s what you’ll need to make Chocolate Bread With Marshmallow Glaze:

  • 180 Grams (1 ½ Cups) All-Purpose Flour
  • 2 Grams (½ Teaspoon) Baking Powder
  • 2 Grams (½ Teaspoon) Baking Soda
  • 6 Grams (½ Teaspoon) Salt
  • 50 Grams (½ cup) Unsweetened Cocoa Powder
  • 200 Grams (1 Cup) White Granulated Sugar
  • 113 Grams (½ Cup or 1 Stick) Butter, Softened
  • 2 Large Eggs
  • 225 Grams (1 Cup) Buttermilk*

*If you don’t have buttermilk, you can substitute for sour milk. Add one tablespoon lemon juice to one cup milk and allow it to sit for 5 minutes to sour.

Marshmallow Glaze

Although the chocolate bread is great on its own, I absolutely love this marshmallow glaze. Here’s what you’ll need for the glaze:

  • 180 Grams (1 1⁄2 Cups) Powdered Sugar
  • 3 Grams (1/8 Teaspoon) Salt
  • 4 Grams (1 Teaspoon) Vanilla Extract
  • 42 Grams (3 Tablespoons) Butter
  • 59 Grams (1/4 Cup) Water
  • 100 Grams (2 Cups) Marshmallows*

*You can use mini marshmallows or large marshmallows. They both melt just fine.

Additional Equipment

This Chocolate Bread With Marshmallow Glaze recipe doesn’t require anything particularly fancy to make. You will want to have these essentials:

The hand mixer isn’t absolutely necessary either. You can mix it by hand if you wish. You’ll just have to mix things together for a few minutes longer.

Slowly stir the wet ingredients in with the dry. I alternated between adding about half of the sugar mixture and half the buttermilk.

Once everything has been well-incorporated, pour the batter into a lightly greased 9-inch by 5-inch bread pan. Preheat the oven to 350 degrees Fahrenheit (176 degrees Celsius) and cook for 55 to 60 minutes. Insert a toothpick, and if it comes out clean, it’s done.

However, if you want to take your chocolate bread experience to a higher level, it’s time to make the marshmallow glaze.

Mix the powdered sugar, salt, and vanilla together in a small bowl and set aside.

In a pan on medium heat, melt butter and water together. Stir in marshmallows and allow them to melt completely.

Keep in mind that you should stir continuously to avoid burning the marshmallows.

Drizzle the marshmallow glaze over your bread. Feel free to go light as just a fun decoration or dump it all on there and go nuts. My daughter thought it would be nice to add some chocolate chips on top (she was right).

Secrets to Success

This Chocolate Bread With Marshmallow Glaze is simple enough that you don’t have to worry much about the end result. If you can stir things together, you can make this bread.

However, if you are a fan of making your bread look pretty, I do have one minor suggestion: let it cool.

If your bread is warm at all, the marshmallow glaze will melt all over the bread and ooze right off the sides (like in the picture above). It will still taste like magic, but it will also turn into a mess.

Want to make special designs or patterns with the frosting? Try placing it in a piping bag and go from there.

Nutritional Information

I’m warning you right now, this chocolate quick bread is not calorie friendly, especially if you add the marshmallow glaze. It’s a sweet dessert, not a healthy day-to-day staple.

Here’s the nutritional facts for a single slice WITHOUT frosting:

Keep in mind that calories will vary depending on the size of your slices and how much marshmallow glaze you use. If you’re light with the frosting and cut thin slices, you can cut down on the calories.

Did You Try It?

I loved making this bread for my family, but I would love to hear about your experience too. Did you use all your frosting? Did you add chocolate chips? Did you keep it simple and eat just the bread without any extras?

Let me know how you did in the comments below! I’m open to any suggestions for improving the recipe as well.
