Apple Pie Bread for Beginning Bakers

As a mom, I tend to rush through my breakfasts. I often grab a quick bowl of cereal or a piece of toast and scarf it down as fast as I can. My daughter can’t stay away from the TV cables or the dog, so I’m always on my toes, ready to tackle her at a moment’s notice.

But a bowl of cereal and a piece of toast look a bit sad first thing in the morning, especially when I eat them almost every day. So when I found this apple pie bread recipe, I couldn’t wait to use it to break up my routine.

Although I made a few mistakes on my first attempt, this bread still turned out lovely. It was sweet enough that it felt like I was eating dessert, but it wasn’t so sweet that I felt sick after having a slice or two for breakfast. It gave me plenty of energy to start my day, and the apples kept my tummy full for a few hours.

Ingredients

As a sweet bread, this apple pie bread recipe requires more than your basic salt, sugar, flour, and yeast. Here’s what you’ll need:

  • 66 Grams (1/3 Cup) White Granulated Sugar
  • 71 Grams (1/3 Cup) Brown Sugar, Packed
  • 28 Grams (1/4 Cup) Butter, Softened
  • 62 Grams (1/4 Cup) Applesauce*
  • 4.2 Grams (1 Teaspoon) Vanilla Extract
  • 2 Eggs
  • 8 Grams (2 Teaspoons) Baking Powder
  • 180 Grams (1 1/2 Cups) All-purpose Flour
  • 80 Grams (1/3 Cup) Milk
  • 230 Grams (1 Large) Apple, Peeled and Chopped
  • 3.96 Grams (1/2 Tablespoon) Ground Cinnamon
  • 71 Grams (1/3 Cup) Brown Sugar, Packed**
  • 1 Tablespoon Butter, Melted

*If you don’t have any applesauce, you can use 56 Grams (1/2 cup) butter instead.
**You’ll use brown sugar in two different steps, so 142 Grams (2/3 cup) brown sugar total.

Instructions

This apple pie bread recipe takes a little while, so you don’t have to preheat your oven just yet (unless you want to do so). To start, use a mixer to cream white sugar, (first half) brown sugar, and butter until fluffy. It should look something like the picture below.

Next, beat the eggs thoroughly and add them to the mixture along with the vanilla and applesauce. Stir them together so you don’t have any lumps.

Combine baking powder and flour, and then add them to the mix along with the milk. Fold together the ingredients until everything has been moistened, but do not over mix or your loaf will turn out heavy and dense. Pour half of the batter into a greased 8 in. x 4 in. loaf pan.

Mix cinnamon with the second half of the brown sugar.

Divide the cinnamon mixture in half and sprinkle it over the batter along with half of the apples.

Stir the remaining apples into the batter. Pour the rest of the batter into the pan, and then sprinkle the last of the cinnamon sugar over the top.

At this stage, you’re ready to cook! Preheat the oven to 350 degrees Fahrenheit (176 Celsius) and bake for 40 minutes.

Your loaf should rise nicely in the oven. Brush the top with melted butter, and cook for another 5 to 10 minutes. Poke with a toothpick; if it comes out clean, your bread is done!

Notes

Keep your apple slices small or your bread will fall apart too easily and be difficult to cut.

Secrets to Success

When I think of apple pie, I think big chunks of apple. Naturally, when I think of apple pie bread, I want to taste the apple with each bite. But large apple chunks make the bread difficult to slice, and the bread falls apart easily. If you can, cut your apple into thin, tiny pieces.

Additionally, don’t let your bread sit in the pan. All you need is a 5 to 10 minutes to let it cool before you turn it out on a plate or cooling rack.

The first time I made this bread, I let it sit in the pan. The loaf had time to sweat and the bottom turned soggy. Although it still tasted good, this bread is much more enjoyable when the edges aren’t mushy.

Nutritional Information

This apple pie bread recipe has a lot of sugar, so you may wonder how many calories each slice has. I’m not the best with a bread knife, so I only managed about 8 thick slices per loaf, though you might be able to cut as many as 12 thin slices.
